First, I made carne asada. I had 2 - 11 oz sirloin steaks, so I juiced a few limes, chopped a few garlic cloves, added a pinch of salt and freshly ground pepper and marinated the steak. After 15 minutes or so, I flipped the steak to make sure both sides were well seasoned. I grilled them on a scorching hot grill pan, for about 3 minutes each side. (We like our meat pretty rare.)
While the steak was grilling, I dumped one drained and rinsed can of pinto beans into the food processor and processed until smooth. (You might have to add a little water.) While it is mixing, dump in some garlic powder, cumin and lime juice, to taste.
When the meat is done, remove it to a plate and let it sit 5 minutes or so and then slice thinly. Toss a sliced onion and pepper into the meat pan to cook a little.
While you are waiting to cut the meat, spread corn tortillas on a cookie sheet and put under the broiler. Watch them closely! They will burn! (Don't ask me how I know...)
Your tortillas will look like this:
To assemble, smear a spoonful of beans on the tortilla and stack with 3 oz. carne asade, a handful of spring mix, some onion/pepper mixture, a sprinkling of cilantro, a sprinkling of shredded cheese and a squirt of lime.
